If your setting has artificial gravity, what other purposes is it used for beyond keeping feet to floors? Is it utilized in propulsion, weapons, medical science, or manufacturing?

I don’t see why not: It’s easy to imagine that the tech that helps people live a stable life on spaceships and planetoids would also be used for interplanetary travel or synthesizing medicine in zero-gravity.

As for weapons manufacturing, that part has been explicitly forbidden by the Interplanetary Council of Humanity. Let’s just say that the first time they tried it was also the last.
